I’ve never enjoyed clothing fashion, but I think I find the same sense of delight and fun in mixing, matching and accessorizing my meals as others do in mixing, matching, and accessorizing their outfits.
I try to stock my shelves with what’s in season, but always need my staples.
Every meal includes veggies, protein, and a healthy source of carbohydrates, just like every outfit needs a top, bottom, and shoes. From there, depending on my mood, I either stick to the basics or get wild and crazy with the accessories.
If you haven’t started coloring outside the lines with your meals, I encourage you to give it a try. Nothing makes healthy foods more fun then figuring out how to make them fit your mood/cravings in surprising ways!
Sandwiches/wraps, salads, and simple skillets are great ways to get started.
Into the skillet: 1 onion, 1 potato, a few mushrooms, black beans, 1/2 bunch kale.
Sauce added near the end: squirts of hot sauce and yellow mustard, drizzle of ginger salad dressing.
Sprinkled on the top: 1/4 avocado chopped, dried cranberries.
It was zesty, sweet & delicious – just like me today :).
My favorite free-styling veggies: kale, spinach, arugula, onions, mushrooms, carrots, peppers.
Proteins: tempeh, seitan, beans, tofu.
Carbs: brown rice, quinoa, Ezekiel bread.
Seasonings: whatever’s in the fridge, fruit bowl, and/or spice cabinet! Get creative!
